200ml newly squeezed lemon juice
500g fine sugar

For the Premix (makes 850ml, serving 10)

Instructions

Making the Syrup: Place all the items into a pan, heat until it reaches a simmer, stirring to dissolve. Then, turn off the burner and leave to reach room temperature entirely. Pour into a sealable bottle, cap it keeping it in the fridge, where it will keep for up to four weeks.

To make Cocktail Base: Mix all the spirits and syrup into a big jug, let it rest for 60 minutes, then filter it best through a fine cloth, to ensure it's fully clarified.

To serve: Measure 85ml from the cocktail base to a cocktail shaker filled with ice, and agitate gently for about 60 seconds to cool it down. Filter into an frosted cocktail glass or similar, garnish with a few cranberries adding the final touch with a light spray with the mandarin essence over the top.
